Carrot Poriyal is a simple & healthy stir fry which can be served as a side dish along with rice. Carrot is rich in vitamins so it is essential to include in our diet.
I added Moong dhal but if you want to make it very simple, you can skip it. Toor dhal can also be used instead of Moong dhal.
INGREDIENTS
CARROT

¼ Tsp

STEP BY STEP PICTURES
Cook the Moong dhal till it becomes soft. It should not turn mushy.
Chop the Carrots into thin match sticks. Cut the onion into fine pieces.
In a kadai heat oil and temper with Mustard seeds,Urad dhal. Then add the Onion. Fry till it turns pink.
Add the Carrot. Saute well until the color changes. Add Salt.
Now add the cooked Moong dhal.
Mix well.
Switch off the flame and add the grated Coconut.
While tempering you can also add Green chilly.
Transfer to a serving bowl.
