LEMON RICE

                             Lemon rice with potato fry is perfect for take away. It reminds me of my school days, especially during excursion my mom used to pack it for me.
INGREDIENTS

LEMON
1 Small size
COOKED RICE
2 Cups
SALT
To Taste
To Temper

OIL
1 Tbsp
MUSTARD SEEDS
½ Tsp
URAD DHAL
¼ Tsp
CHANNA DHAL
1 Tbsp
GREEN CHILLY/RED CHILLY
2
GINGER
A Small Piece
ASAFOETIDA
A Pinch
TURMERIC POWDER
¼ Tsp

STEP BY STEP PICTURES
Soak Channa dhal for 10 mins. Extract lime juice form lemon.

Spread the cooked rice in a plate. Allow it to cool down. When the rice is hot,drizzle oil & mix gently so that it will remain separate.

In a kadai heat oil and add the items given under the "To Temper table".

You can also add Peanuts. Allow it to cool down and add the lemon juice. Else it might turn bitter.

Mix this tempering with the rice

Allow it to rest for 30 mins before serving.
