You can use Carrot,Beans,Cabbage,Peas,Cauliflower which gives a rich masala taste.

STEP BY STEP PICTURES
Chop the vegetables into strips.
In a pan heat oil & add Carrot,Beans,Cabbage.
You can also add ¼ Tsp of sugar to keep the vegetables crisp & colourful.
Add Red chilly powder,Briyani Masala/Garam masala,Salt.
Now add the milk.
Stir well & keep covered for 3 mins.
Par boil the Cauliflower,Frozen Peas & add it
Mix well until the masala blends with vegetables.
When the oil sepeartes out switch off the flame.
Vegetable Masala is ready.
You can also add Paneer.
Spread this stuffing in Dosai.
You can also spread this Masala in the bread.
