TOMATO THOKKU

   I like to have any varieties of Thokku. I love Mango Thokku with Curd rice. Every year during Mango season,my mom prepares Mango Thokku & stores in bulk quantity. This tomato thokku can be called as a Pickle also. It goes well with Idly/Dosai,Chapati. You can see the original recipe here

INGREDIENTS

TOMATO
5 - 6
RED CHILLY POWDER
2 Tsp
TURMERIC POWDER
½ Tsp
FENUGREEK POWDER
1 Tsp
SALT
To Taste
OIL
2 – 3 Tbsp
MUSTARD SEEDS
¼ Tsp
ASAFOETIDA
A Pinch

Heat oil & add Mustard seeds,Asafoetida,Chopped Tomatoes.

Add salt. Mash the tomatoes.

Now add Turmeric powder,Red chilly Powder.

Do not add water as tomatoes leave water.

It should reduce in volume. Lastly add Fenugreek seeds powder. Stir until oil oozes out.

Transfer to an air tight container. Store it in a fridge. Always you a clean & dry spoon for preserving it for a month.
